ATX Butcher Shop started because we got tired of the supermarket meat case — shrink-wrapped mystery cuts from facilities we'd never visit. We wanted something different for Los Angeles.
We break down whole animals in-house. We know every rancher by name. We cut to order, not to fill a case. That means less waste, better quality, and a conversation at the counter instead of a barcode.
Our team includes trained butchers who've worked in restaurants, farms, and meat processing — people who understand the full chain from pasture to plate.
